This easy, budget-friendly Beef and Tomato Rice Bowl will make your weeknight meal a hit! What could be better than buttery rice, juicy tomatoes, earthy garbanzos, and unctuous beef? You probably already have all the ingredients you need in your pantry to make this delicious and filling meal.

Ingredients for Beef and Tomato Rice Bowl

This Beef and Tomato Rice Bowl is so versatile. Before we go into the variations, let's take a look at what you will need.

  • Ground beef adds flavor to the mix and gives it more bulk. You can replace ground beef with mushroom mince or plant-based ground meat.
  • Garlic and Onion are aromatics that add depth and flavor. You can substitute the fresh onion with 1 tablespoon of onion flake powder or 3 teaspoons of dried onion flake. Use 1/2 teaspoon of garlic granules to replace the fresh garlic.
  • Diced tomatoes- Add acidity to help cut through the fattiness in the beef. This will increase the volume. You can replace the diced tomato with equal amounts of fresh tomatoes, crushed or sauce tomatoes. The texture of the beef mix will vary depending on the substitution.
  • Chickpeas -- add earthiness to your meal and bulk up. You can substitute your favorite canned beans, but make sure that they have been drained. You will have to rehydrate dry beans and then cook them through if you wish to use them.
  • Oregano and Cumin , as well as Red Pepper Flakes , all add flavor. Substitute 3/4 teaspoons of your favorite spice mix.
  • Rice We used Jasmine, but you can use any rice that you have. You can serve the beef mixture on top of cauliflower rice, mashed potato, or wilted leaves.

Variations

  1. To make this dish vegan, substitute the chicken broth for veggie broth and use your favorite meat alternative. Use soy instead of Worcestershire.
  2. To increase the servings and add bulk to the beef mixture, diced potatoes or carrots, spinach or kale or sliced zucchini or mushrooms can be added.
  3. Skip rice, and serve the beef mix over Riced Cauliflowers, Mashed Potatoes or Roasted Vegetables.
  4. Top the dish with your favorite toppings such as shredded cheese, sourcream, or slices of avocado.

How to Store Leftovers

In the refrigerator, you can keep leftovers of Beef and Tomato Rice Bowl in an airtight container up to 4 days. In the freezer, they can be stored for up to four months. Before sealing, wrap the surface in plastic wrap or parchment paper to prevent freezer burn. When meal-prepping, freezing or refrigerating the mixture, top the container with the rice and then add the beef. The rice will not absorb all the sauce if you do this. In the microwave, you can reheat leftovers. Cook the mixture in increments of 30 seconds until it is steaming.

  • 1 3/4 tsp salt, divided $0.05
  • 1 yellow onion, diced $0.42
  • 2 cloves garlic, minced $0.10
  • 1/2 tsp oregano $0.05
  • 1/4 tsp ground cumin $0.03
  • 1 tsp Worcestershire sauce $0.03
  • 1 can diced tomatoes, 15 oz $1.00
  • 1/2 cup chicken broth $0.08
  • 1 can chickpeas, 15 oz, drained $0.79
  • 2 cups rice $0.85
  • 3 cups water $0.00
  • 2 Tbsp salted butter $0.28
  • 1 pinch red pepper flakes $0.02

Instructions

  • Add the cooking oil to a large, deep skillet made of stainless steel and heat it over medium high. Add the beef to the heated oil and sprinkle with 1/2 teaspoon of salt. After the beef is browned, remove the beef from the pan. About 2 tablespoons rendered fat should be left in the pan.
  • Add the onion dices to the pan, and cook for 2 minutes until translucent. Add the minced cloves of garlic to the pan, and cook for about one minute until fragrant.
  • Add oregano and ground cumin to the pan. Add the tomatoes, juices and diced to the meat. Stir well to combine.
  • Add the chickpeas and chicken broth to the beef mixture. Add 1/4 teaspoon of salt, and mix. Cover the pan, and cook for about 20 minutes until the chickpeas are soft.
  • Add the rice, water, salted Butter, and the remaining 1 teaspoon salt to the rice cooker while the beef mixture is cooking.
  • Sprinkle red pepper flakes on top of the tomato and beef mixture when it is finished cooking. Divide the rice between four bowls, and then top it with the beef mixture.

How to make Beef and Tomato Rice Bowl with Step-by-Step Photos

Add 2 tablespoons cooking oil to a large stainless steel pan and heat it over medium high heat. After the oil is heated, add 1/2 pound of beef ground and sprinkle with 1/2 teaspoon of salt. While the beef is browning, break large chunks with a wooden spoon. After the beef is browned, remove the beef from the pan. About 2 tablespoons rendered fat should be left in the pan.

Then add the onion dices to the pan. Cook until transparent, approximately 2 minutes. Add the two minced garlic cloves to the pan, and cook for about one minute until fragrant.

Add 1 teaspoon Worcestershire sauce, 1/2 teaspoon oregano and 1/4 teaspoon cumin to the pan. Top the meat with a 15-ounce can diced tomato and its juices. Stir well to combine.

Add one 15-ounce can drained of chickpeas and 1/2 cup chicken broth to the beef mixture. Sprinkle 1/4 teaspoon of salt over the mixture and mix well. Cover the pan, and cook for 20 minutes.

Add 2 cups of rice, 3 cups of water and 2 tablespoons salted butter to a rice-cooker while the beef mixture is cooking. Cover and cook. Check out our blog on How To Cook Rice if you don't have a rice maker.

Sprinkle a pinch or more of red pepper flake on top when the mixture of beef and tomatoes is done cooking. Divide the rice between four bowls, and then top it with the beef mixture. Enjoy this delicious meal that you made in a jiffy!
